Selective harvest of gamefish is an important part of the fishing experience for many anglers. A batch of freshly caught fish brings our families together for a delicious and nutritious meal. Fish preparation, especially with larger gamefish like catfish, salmon, pike and walleye can actually start before the cleaning begins. Bleeding fish is an easy process that rids fish tissue of blood, minimizing spoilage and “off” flavor should fillets sit a while before eating. It also has the added benefit of greatly reducing mess on the cutting board. Bleed fish just before leaving the water, then toss on ice.
